I read Martha Stewards cookbook. What should I study now? How to start being a chef?

Define Java EE. Do you have a clue what it is?

Edit: let me help you. The WEB profile, so PART of Java EE is this:
    Servlet
    JavaServer Pages (JSP)
    Unified Expression Language (EL)
Debugging Support for Other Languages (JSR-45)
JavaServer Pages Standard Tag Library (JSTL)
    JavaServer Faces (JSF)
Java API for RESTful Web Services (JAX-RS)
    Java API for WebSocket (WebSocket)
Java API for JSON Processing (JSON-P)
Common Annotations for the Java Platform (JSR-250)
    Enterprise JavaBeans (EJB)
    Java Transaction API (JTA)
    Java Persistence API (JPA)
    Bean Validation
    Managed Beans
    Interceptors
Contexts and Dependency Injection for the Java EE Platform
    Dependency Injection for Java

If you want to learn "Java EE", pick one.

I guess that depends on what programming languages or similar tools you already know and how well you know them. Since Java is the foundation for those items mentioned above I would take every effort to ensure that the foundation is strong. There are quite a few aspects to Java itself (Threads, generics) and to programming techniques and algorithms (sorting, searching, design patterns) in general.

Here's a thought: create an addressbook. A simple domain, yet the clients can be surprisingly difficult to get right.

    Create a client that works
    - on the commandline
    - via a Swing client
    - two tiered: JSP + database
    - three tiered: JSP + EJB + database
    - as a webservice/REST

Once you master a step, try the next one. Make sure you understand what you are doing instead of blindly copying code out of a tutorial.

I am PHP Programmer but I don't want use Java for web, I wanna use it for desktop and enterprise applications.
Now I think EJB is good for next level, is my selection good?

Write algorithms in JavaSE first in my opinion. Make a GUI calculator with swing and go from there.
