When you say convert to text, do you mean dictation, as in the spoken words become written words?

Yeah, there is totally a way - if you have a ton of Master's+ level math classes under your belt and have about a year to fine tune the workings of the algorithm, not to mention a massive input set of voice samples to perform calibrations. We did a project like this in grad school, and it took the better part of a semester to get the app to recognize a simple pre-known sentence, let alone transcribe text from random people. An iPhone makes it look easy, but the algorithms used have been painstakingly refined over the last 30 years. This is one of the harder challenges in the realm of computer science.
You can totally do this in java. But do you have any idea of the mathematics involved?
