Java and PHP were designed for different purposes and have different strengths and weaknesses. Neither is going to replace the other.
Use whatever you know and like, as long as it's an appropriate tool for the job.

I hate to burst your bubble, but I wouldn't base my entire career on any one language. I thought you were asking about what to use for a project.

It isn't panic, it's enthusiasm - and a thoroughly Good Thing.
The trick is to focus it. As Fubarable and others have said: pick one, put your head down and learn it.
The answer to your question about what language you might make a career out of is easy. Assuming a normal life span and barring accidents it will be a language that hasn't been written yet. (Except possibly for C which really *does* have legs.)
If I am correct, Java was designed to be a cross platform programming language where you wouldn't need to adjust any of your code, APIs you were using. (Well, it was originally designed for interactive TV, lol.) It though has APIs for being a service side processing language.
While PHP was originally designed to be a server side scripting language. "PHP," originally stood for "Personal Home Page tools," now it stands for "PHP HyperText Preprocessor." PHP though has bindings to SDKs like GTK+.
