You probably should focus on learning to program in general not just learning the language. The basics of java are all fairly simple to learn. It's dependent on how much effort you put into it. I would suggest you read htdp, available for free at htdp.org, it's not java but it's a great book. I would also highly suggest head first java.

imxo I don't like .NET. There are all tools, which it use it is paid and new versions it not compatible between them.
I can't say that the more easy for learning. I think each program language has some difficult things.

If you want to know some of the more challenging parts of programming try looking at concurrency, generics, and networking(this is my personal opinion and others may have different ideas about what is easy and difficult)
It's probably not a bad idea to learn multiple languages(if you are confident) I am fairly new I am starting to approach more advanced topics in java. I am also starting c++ and c#.

I can't give you a lot of projects with sql backends, but you can try doing an address book, a calculator or notepad.
