Creating a keylogger.
I know the title sounds sketchy but I actually have a good reason for doing this. My father runs a call center close by and wants to make sure his workers are making the most of their time there. So He wanted me to make him a interface where he can see what sites they've been on, what keystrokes they have typed, and how many 'Audits' they have booked that day. Any help is appreciated. Thanks.

I'm pretty sure (depeding on the country you're living in) this won't be legal. At least if they open up for example mail.provider.org and enter their password you've capture username and password along with all the other datas.
For "kiosk systems", I'm pretty sure that's something you're searching for, there are ready to use systems out there.

Well my father would have them sign a contract saying that nothing that they do on the work computers is private.

As the question has nothing to do with Java, I've moved it here from New to Java.
And before you say "But..." let me say that you can't write a keylogger in Java.

Couldn't you use a JNI and hook it with some C or C++ Code? Also my intention was to in some way get started on writing a script that would do this in java. I don't know what you mean "has nothing to do with Java."
