I suggest looking into how wave files work and how to read them with Java. You would probably have to see what different words do to the wavelengths, and then a LOT of math would probably be applied. That's all I can really tell you, I hope this gives you somewhere to start.

If you like to use an entire Java speech recognizer, try CMU Sphinx4.
It is a good option for a Java solution.

It implements all related to speech recognition - digital signal procession (DSP) front-end, Hidden Markov Models (HMMs) - related to acoustic models, grammar and language models.

It is necessary to build acoustic models for your language. In my case, Brazilian Portuguese.
